Rahr Malt

I had the pleasure of photographing the production of malt at Rahr Malting Company in Shakopee, MN and Alix in Alberta, in 2012 & 2019. The barley goes through a process of steeping, germinating and kilning. The principal result of this processing is that the starches have been broken down into more simple sugars, the enzyme potential has been optimized, color generated and the malty flavor developed.
